The Story

A brand born from the mission to preserve Japan's disappearing aged sake culture and pass it on to the future. Japan's aged sake culture, which had once declined following the Meiji-era tax law reforms, faced a critical crisis as small and medium-sized sake breweries struggled with labor shortages and the burden of storage. Driven by this sense of urgency and mission, in 2023 we established "Japan's Koshu Warehouse"—Japan's first collaborative storage facility dedicated to aged sake—in partnership with ten breweries nationwide. We remain committed to traditional room-temperature aging methods that forgo refrigeration equipment, employing diverse storage methods using wooden barrels, stainless steel tanks, and enamel-lined vessels to breathe new value into each carefully aged drop.
